It all began in 1985 when Paul Olivier set up his fishmonger’s shop in Loctudy in the heart of the Cornouaille port business area. This position allowed him each day to select the very best coastal and deep sea fish. The business, which is constantly evolving, was taken over by his sons, Gwendall and Tual in 2002 perpetuating their father’s expertise, the former master fishmonger. In 2005, the purchase of Arvoriz Mareyage which had been in Loctudy since 1975, gave the opportunity to enlarge their customer base and increase production. Today, Les Brisants takes 1500 tons gross and converts it into 1000 tons of produce delivered per year to more than 100 customers across France and Europe and has its own label, Brisants Selection, created in 2011.
